Grilled Pork Bahn Mi

Ingredients

• Baguette bread

• 300g pork

• 200g daikon radish

• 100g carrot

• 1 cucumber

• 1/4 onion

• A handful of cilantro

Seasonings

• For pickling radish and carrots:

   2 tbsp vinegar, 1.5 tbsp sugar, 1 tsp salt

• For seasoning pork:

   3 tbsp TK bulgogi galbi sauce, 1 tbsp cooking wine, a pinch of pepper, 1 tsp sesame oil

• For bread spread:

   2 tbsp mayonnaise, 1 tbsp sriracha, 1 tsp honey

Instructions

  1. Julienne the radish and carrot.

  2. Mix vinegar, sugar, and salt, then marinate the radish and carrot for about 20 minutes.

  3. Cut the pork into bite-sized pieces and season with bulgogi sauce, cooking wine, pepper, and sesame oil. Mix well.

  4. Thinly slice the cucumber and onion. Soak the onion in water to remove its sharp flavor.

  5. Heat a frying pan and grill the marinated pork until all the moisture evaporates and the meat is well-browned. If available, use a kitchen torch at the end to add a smoky flavor.

  6. Cut the baguette in half and toast it.

  7. Mix mayonnaise, sriracha, and honey to make the spread.

  8. Spread the sriracha mayo evenly on the bread.

  9. Layer cucumber, grilled pork, onions, and drained pickled radish and carrots.

  10. Finish with cilantro and close the sandwich.
